Choosing the name of your own restaurant is an important step in a professional life.
Justine and Maxime understood it perfectly. They didn't want, above all, falling into the facility of taking a commun name. They were looking for THE NAME.
That is how Justine discovered the word "Symbiosis" (from greek σύν sýn, together and βίος bíos to live)…
And the definition: an intimate and sustainable relationship between different organisms (belonging to different species), it was obvious... Every signs of love, of the impossibility of working one without the other and the compatibility, all together were perfectly matching, creating an harmony, almost a perfect alchemy.
"Symbiose" was created and the adventure could start.
For them Gastronomy is not a word that scares, quite the contrary ... And Maxime proves it every day on his stove, offering a cuisine with multiple faces, adapted to the products of the moment and his creativity constantly awake.
